Egg, arugula, and charred asparagus salad. You don’t have to be a vegetarian to enjoy this tasty salad recipe from CookingLight! You’ll need a boiled egg; some asparagus spears; baby arugula; extra-virgin olive oil; kosher salt and black pepper; whole-milk Greek yogurt; lemon juice; and water. Cut the egg into quarters and sprinkle it with salt and pepper. Next, add a pinch of salt and pepper to the olive oil. Spread the asparagus on a baking sheet, and drizzle the olive oil mixture over it. Broil until it’s lightly charred. For the dressing, combine a tablespoon of water, three tablespoons of yogurt, a teaspoon of lemon juice, and salt and pepper to taste. Put the arugula in a bowl, add the dressing, and toss. Then top with the asparagus and egg. Tip: For a little bit of extra crunch, add a tablespoon of pine nuts.

You’ll also need cream cheese; chopped, fresh dill; peeled and grated cucumber; some cucumber slices; a portion of thinly sliced roast beef; and salt and ground black pepper to taste. Wrap a few teaspoons of the grated cucumber in a paper towel and gently squeeze to release the liquid. Then mix it in a bowl with the cream cheese, dill, salt, and pepper. Slice the roll, and spread the cream cheese mixture on one side; then place the roast beef, cucumber slices, and the other side on top. Your sandwich is ready to enjoy!
Avocado tomato wrap. This super-healthy wrap from Taste of Home takes only 10 minutes to make, so it’s not only tasty, but also very convenient. You’ll need a thinly sliced avocado and a tortilla (use your favorite flavor). You’ll also need a leaf of lettuce, half a tomato, some shredded Parmesan cheese, garlic powder (optional), and a pinch of salt and pepper. Using a fork, mash an eighth of the avocado and spread it over the tortilla. In layers, add the lettuce, tomato, and half of the remaining avocado.
